Homemade Ginny’s Gin Pimm’s Cup
There is no cocktail that speaks to me more of summer than a cool, refreshing glass of Pimm’s. I make my own homemade version and (confession) have been doing so for decades ever since we made buckets of it in the bathtub while in college, lol! Share a pitcher with your pals poolside to get the party started.
WHAT YOU NEED
- 1 orange
- 10 oz Ginny’s Gin
- 7 oz sweet vermouth
- 3 1/2 oz orange liqueur (like Cointreau or Triple Sec)
- 2 oz. Campari or Aperol
- A few dashes of orange bitters – we love local Flora Luna Bitters
DIRECTIONS
Wash and slice the naval orange, leaving the peel on. Place the orange slices in a glass jar and pour in Ginny’s Gin, vermouth, orange liqueur, Campari, and a few dashes of orange bitters. Seal the jar and shake. Let sit for 24-72 hours. Strain out the oranges and pour back into the jar. On party day, pour your homemade Pimm’s into a pitcher and add ice, mint, strawberries, and orange slices. For each serving, pour 2 to 3 oz of your homemade mix into an ice-filled Gabriel-Glas stemless glass and top with Sprite, ginger ale or ginger beer. Garnish with a long cucumber ribbon, mint, strawberries, and an orange slice. Or, for a real celebration, top it off with Champagne, Prosecco, or sparkling wine for a Pimm’s Royale!
